Chocolate Coconut Protein Balls

Ingredients
10-12 medjool dates
3/4 cup oats
2 tbsp nut butter (peanut, almond, sunflower, cashew, etc)
3 tbsp unsweetened cocoa powder
1/2 cup unsweetened shredded coconut (optional)
Directions
Remove seeds and soak for 5 minutes in hot water. Drain the water and squeeze out any excess water.
In a food processor, add the oats and blend until it becomes more of a course flour.
Then add in the dates, nut butter of your choice and cocoa powder. Pulse until combined. You might need to stop occasionally and scrape the edges.
If you choose to add coconut, add about 1/4 cup in now and lightly pulse it in.
Then roll into bite size balls.
If you choose, you can roll the balls into the remaining coconut shreds to add a nice texture.
Keep in the fridge to maintain freshness!
