Greek Salad

Ingredients

  • Arugula

  • Chickpeas

  • Cherry tomato

  • Black olives

  • Red onion

  • Feta

  • Trader Joe's vegan tzatziki


Directions

  1. Start by putting a bed of arugula in a bowl.

  2. Chop the olives and tomatoes in halves

  3. Drain and rinse the chickpeas

  4. Thinly slice the red onion

  5. Assemble the salad with a handful of chickpeas, onion, olives, and tomatoes

  6. Sprinkle on the feta

  7. Top with a dollop of tzatziki
