Ingredients
Arugula
Chickpeas
Cherry tomato
Black olives
Red onion
Feta
Trader Joe's vegan tzatziki
Directions
Start by putting a bed of arugula in a bowl.
Chop the olives and tomatoes in halves
Drain and rinse the chickpeas
Thinly slice the red onion
Assemble the salad with a handful of chickpeas, onion, olives, and tomatoes
Sprinkle on the feta
Top with a dollop of tzatziki
