Mom's ~Famous~ Macaroni Salad

Ingredients

  • Ditalini noodles

  • Carrots 

  • Celery

  • Green onion 

  • Best Foods vegan mayo

  • Salt & pepper


Directions

  1. Boil your water and cook an entire box of ditalini noodles. Follow the package accordingly.

  2. Finely chop the carrots and celery into little cubes. I use about 2 whole carrots and 4 celery sticks

  3. Thinly slice the green onion too.

  4. Once the pasta is done cooking, drain and put in the fridge to cool down

  5. When the pasta has finished cooling completely, add in the carrots, celery and green onion. Add about 4 heaping tbsp of Best Foods vegan mayo and stir.

  6. Next is my dad's (least) favorite step -- add more mayo if your heart desires. There is no perfect amount of mayo, just make sure all the noodles and veggies are evenly coated.

  7. Finally, top with a bit of salt and lots of pepper
