Chick'n Noodle Soup

Ingredients

  • Small onion, finely diced

  • 3 cloves garlic, minced

  • 3 stalks of celery, chopped

  • 2 whole carrots, cubed

  • 1 carton of vegetable broth (approx 5-6 cups)

  • Noodles

  • Trader Joe’s vegan chickenless seasoning salt

  • Thyme

  • Salt & Pepper

Directions

  1. In a large pot or saucepan, heat the pan with about a tablespoon of olive oil

  2. Once heated, add in your onion and garlic to the pan

  3. Sauteé for about a minute

  4. Add in your celery and carrots, stirring for about 3-5 minutes

  5. Add in a whole carton of vegetable broth and bring to a boil

  6. Add in a generous amount of thyme, salt & pepper. Add maybe ½ tsp of Trader Joe’s vegan chickenless seasoning salt

  7. Once it has been boiling for 10 mins (maybe??) when the carrots are starting to get soft, add in the noodles (approx. 1.5 cups) 

  8. Cook until the noodles are al dente & then serve!
