Street Style Chorizo Tacos

Ingredients

  • 4 corn tortillas

  • 1/4 cup Morning Star Farms veggie chorizo crumbles

  • 1/6 of white onion, diced

  • Cilantro, chopped

  • 1 avocado, mashed

  • 1 lime

  • Salt

  • Cayenne pepper

Directions

  • Start by cooking the Morning Star Farms veggie chorizo crumbles according to the package

  • While that is cooking, make your guacamole -- use one whole avocado, and mash. Then add in 3/4 of a lime, chopped cilantro and diced onion. Top with a bit of salt and cayenne pepper

  • Once the chorizo is cooked, use the same pan to heat up your tortillas. Make sure to stack two together so the tortilla doesn't break

  • When the tortillas are hot, place on a plate and top with the chorizo, chopped onion, chopped cilantro and guacamole
