Fried Rice

Ingredients

  • Olive oil, drizzle

  • 1 cup rice, cooked

  • 1 whole carrot, cubed

  • Some frozen peas, defrosted

  • 1 stalk of green onion/scallions, thinly sliced for garnish

  • 1 tbsp soy sauce

  • ½ tbsp vegan butter

Directions

  1. It is best to used day-old rice, but if you forget to make it a day ahead of time, start to cook your rice according to package

  2. While the rice is cooking, in a frying pan, add olive oil and carrots

  3. Once the carrots are pretty soft, add the frozen peas

  4. When the rice is done, add it to the frying pan to mix together with the carrots and peas

  5. Add soy sauce and vegan butter to taste

  6. Add the green onion and serve!
