Quick & Simple Breakfast Burrito

Ingredients

  • 2, 1/4 inch strips of tofu

  • 1 Trader Joe’s frozen hash brown

  • 1 flour tortilla

  • 1/4 of an avocado

  • Frank’s red hot Buffalo sauce

  • 1/8 tsp Garlic powder

  • 1/8 tsp onion powder

  • 1/8 tsp turmeric

  • 1/4 tsp salt

  • 1 tbsp nutritional yeast


Directions

  1. Start by popping your frozen Trader Joe’s hash brown in the air fryer at 390°F for 12 minutes, flipping halfway through

  2. While your hash browns are cooking, get a skillet and heat up some olive oil in the pan.

  3. Using your hands or a potato masher or a fork, crumble your tofu into the pan. Cook for about three minutes to get the excess water out of the tofu.

  4. Then add your spices (garlic powder, onion powder, turmeric, salt, and nutritional yeast). Cook for about 4 to 5 minutes

  5. Once that’s all done it’s time to assemble. Lay out your tortilla on a plate, then add your scrambled tofu, put a light drizzle of Frank’s red hot buffalo sauce, then crush up your hash brown, and top with slices of avocado.

  6. Roll it up and enjoy!
