Copycat Catelli's 'Michael's Pasta'

One of my favorite restaurants back home is Catelli's in Gyserville. Before I went plant based, I used to LOVE their Michael's Pasta. Below is an exact copy of their Domenica sauce I found on the Food Network and added the additional ingredients that are in the 'Michael's Pasta'.

Ingredients
2 tbsp olive oil
4-5 cloves of garlic, minced
1/2 tsp red pepper flakes
1, 28oz can of crushed tomatoes
6 oz of mushrooms (or as many as you prefer)
1/2 tsp salt
3 Beyond Meat Italian Hot Sausages
Pasta of your choice, I chose red lentil pasta
Directions
To make the Domenica sauce, start by heating up a saucepan and adding the olive oil, minced garlic and red pepper flakes.
Let the red pepper flakes infuse into the oil for 2-3 minutes, stirring occasionally so it doesn't burn.
Then add in the 28oz can of crushed tomatoes, salt, and mushrooms. Stir to combine.
Let that simmer for 20-30 mins.
Then in a pot, boil water and cook pasta according to package.
Cut up the 3 Beyond Meat sausages into little disks and cook in another saucepan for about 5 minutes or until brown. Make sure to not overcook
Once the pasta is done, drain the pasta and add to the Domenica sauce. Add the sausage when it is ready to the same sauce.
Mix it all up and serve!
