Spicy Red Pasta

Ingredients

  • Your favorite type of pasta, I use brown rice or chickpea pasta

  • Tomato sauce (normal sized can)

  • ½ - 1 tbsp Red Pepper Flakes

  • ¼ medium yellow onion, diced

  • 4-5 Garlic Cloves, minced

  • 2 tbsp Olive oil

  • Unsweetened & unflavored Coconut milk (from a carton), 2 large splashes

  • Salt, dash

Directions

  1. Start by boiling salted water and then add in your pasta.

  2. In a medium saucepan, heat about 2 tbsp of olive oil. Once heated, add in your diced onions, garlic, dash of salt and your desired amount of red pepper flakes (½ - 1 tbsp)

  3. Saute for a couple minutes to release the aroma of the spices. Then add in your tomato sauce and turn to low heat.

  4. Once your pasta has cooked, add about ¼ cup of pasta water to the tomato sauce mixture and stir. You can then drain your pasta and add it to the mixture as well. If needed, add a couple splashes of coconut milk to make it thinner and creamier
