The core of this recipe come from traditional vodka sauce pasta, however, when I was making this recipe, I didn't have any vodka, therefore I have created this "Spicy Vodka Pasta sans Vodka." If you don't know French, sans means without. Now onto the recipe...
Ingredients
Your favorite type of pasta (some good ones for this are rigatoni, penne, or fusilli)
2 shallots, finely diced
3-4 cloves garlic, minced
6 oz of tomato paste or about ¾ of a cup
⅓ cup of water (if you want to make it be vodka pasta, use same amount of vodka)
¾ cup unsweetened coconut cream
Lots of red pepper flakes (1 tbsp?)
Salt & Pepper
Olive Oil
½ - 1 tbsp vegan butter (optional)
Directions
While following the directions below, cook your desired pasta simultaneously. Make sure to reserve about ⅓ cup of pasta water!
In a saucepan, heat about 1 tbsp of olive oil and 1 tbsp butter
Once the butter has melted, add in your diced shallots and minced garlic
Wait until the shallots are soft and add in your desired amount of red pepper flakes. (I like mine spicy so I used about 1 tbsp)
Stir that for about 30 seconds to release the aromas before adding in your tomato paste
Once the tomato paste has started to liquify, add in your water
When the tomato paste and water have turned more into a sauce, add in your coconut cream
Simmer for about 5 mins and top with a dash of salt and pepper.
Now, with your drained pasta, combine the pasta with the sauce and pasta water. Stir together and then serve.
